Still time for Easter dessert 🥕

This past week, I made two versions of one of my all-time favorite spring desserts.

First up: this old fashioned carrot cake with pineapple. It's a super soft, classic layer cake that I actually made for my dad’s birthday last weekend. It’s one of those recipes that’s been on repeat in my family for years, and for good reason. The crushed pineapple along with freshly grated carrots keep it incredibly moist, and the cream cheese frosting is thick, tangy, and just right.

If you want something a little more traditional (or you’re celebrating a spring birthday, too), this is the one to make.


And if you’re leaning more low-key or hosting a smaller group, these mini carrot Bundt cakes are such a fun option. They come together in one bowl (no mixer needed!) and bake up into six adorable little cakes with that same soft, spiced carrot cake texture.

I finished mine with a simple cream cheese glaze that drips into all the little grooves. These treats feel a bit fancy without being fussy.
